Most carries will do an "agreed value" policy. It will cost more of course but you typically have an independent appraiser come out and give an estimate and then possibly also show recent sale prices for similar vehicles. A little harder to do that last part with stuff like this, but a decent compan...

Oh, and I will admit a massive (for an RV or truck at least) fridge running off solar is way, way better than an ice chest any day. Cold beers ready in the fridge 24/7 - yes! This thing typically travels to the kids sports games. Cold beers in the fridge for that don't hurt either!!
