Too much caster can make it wobble too. If hitting the brakes makes it worse perhaps its because your caster increases when the front dives. Since you have coil overs maybe try increasing ride height and see if it changes or lower ride and see if it gets worse. How much is Tons?

Those holes way out at the end of the plates aren't really going to do very much until the other four have pulled out or deformed the floor about a half inch, so I would drill some different holes in that plate if you can find places that have better meat underneath. Generally if you widen the track you need to make the inside front wheel turn sharper and the outside a little less to follow the same radius turn. From a quick sketch it looks like a couple degrees difference from stock at a 40ft radius and +4inches per side. Caster and camber make a big difference...

Probably the biggest killer would be a spool in the back, or a locker that locks easily. Then different offset wheels that change the scrub radius and steering geometry probably doesn't match the width and wheelbase quite like a stock setup.

Unlikely it has anything to do with drive shaft or u-joints if it is locking up. Isolate the problem by disconnecting driveshaft. Looks like the worst qualities of a Bronco II and an S10 Blazer combined. With those wheels Im guessing it may come with airbag system so you can hop it down the trail.
